Smothered Pork Chops

Bone-in pork chops braised until tender in a rich onion gravy. Pure Southern soul food.

Ingredients

  • 4 bone-in pork chops (1 inch thick)
  • 1 tsp salt
  • 1 tsp pepper
  • 1/2 tsp garlic powder
  • 1/2 tsp onion powder
  • 1/4 cup flour
  • 4 tbsp vegetable oil
  • 2 large onions (sliced)
  • 2 cups chicken broth
  • 1 tbsp Worcestershire sauce
  • Fresh thyme sprigs

Instructions

  1. Season pork chops with salt, pepper, garlic powder, and onion powder.
  2. Dredge chops lightly in flour, shaking off excess.
  3. Heat oil in a large skillet or Dutch oven over medium-high heat.
  4. Brown pork chops 3-4 minutes per side. Remove and set aside.
  5. Add onions to the pan and cook until soft and golden, about 10 minutes.
  6. Sprinkle remaining flour over onions and stir 1 minute.
  7. Add broth and Worcestershire, scraping up browned bits.
  8. Return chops to pan and add thyme.
  9. Cover and simmer on low for 45 minutes to 1 hour until tender.
  10. Serve chops topped with onion gravy.

💡 Tips & Notes

Low and slow is the key here. The long simmer makes the chops incredibly tender and the gravy rich and flavorful. Serve over rice or mashed potatoes.
