Fried Okra

Crispy cornmeal-crusted okra fried until golden. A summer garden classic.

Ingredients
1 lb
fresh okra
1 cup
cornmeal
1/2 cup
flour
1 tsp
salt
1/2 tsp
pepper
1/4 tsp
cayenne
1
egg
1/2 cup
buttermilk
Vegetable oil for frying
Instructions
Wash okra and slice into 1/2-inch rounds. Pat dry.
Mix cornmeal, flour, salt, pepper, and cayenne in a bowl.
Whisk egg and buttermilk in another bowl.
Dip okra in egg mixture, then dredge in cornmeal mixture.
Heat 1/2 inch of oil in a cast iron skillet to 350°F.
Fry okra in batches, not crowding the pan.
Cook 3-4 minutes, turning until golden brown on all sides.
Drain on paper towels and season with more salt immediately.
Serve hot!
💡 Tips & Notes
The key to crispy (not slimy) okra is cutting it fresh, keeping it dry, and frying in hot oil. Salt it right out of the fryer for best flavor.
