Buttermilk Biscuits

Tall, flaky, buttery biscuits that melt in your mouth. The foundation of any good Southern breakfast.

Ingredients

  • 2 cups all-purpose flour
  • 1 tbsp baking powder
  • 1/4 tsp baking soda
  • 1 tsp salt
  • 1 tsp sugar
  • 6 tbsp butter (very cold, cubed)
  • 3/4 cup buttermilk (cold)
  • 2 tbsp melted butter (for brushing)

Instructions

  1. Preheat oven to 450°F. Line a baking sheet with parchment.
  2. Whisk flour, baking powder, baking soda, salt, and sugar.
  3. Cut in cold butter using a pastry cutter until mixture resembles coarse crumbs.
  4. Add buttermilk and stir just until dough comes together.
  5. Turn onto floured surface. Pat to 1-inch thick.
  6. Fold dough in half, pat down. Repeat 3-4 times (creates flaky layers).
  7. Pat to 3/4-inch thick. Cut with 2.5-inch biscuit cutter.
  8. Place biscuits touching on baking sheet (helps them rise tall).
  9. Bake 12-15 minutes until golden brown.
  10. Brush with melted butter immediately.

💡 Tips & Notes

Cold ingredients are essential! Some bakers freeze their butter and grate it. Don't twist the cutter - push straight down or your biscuits won't rise evenly.
