Hushpuppies

Crispy fried cornmeal fritters - the perfect companion to fried fish or barbecue.

Ingredients
1.5 cups
cornmeal
1/2 cup
flour
1 tbsp
sugar
1 tsp
baking powder
1/2 tsp
salt
1/4 tsp
cayenne
1
egg
3/4 cup
buttermilk
1/4 cup
onion
(finely minced)
Vegetable oil for frying
Instructions
Heat 3 inches of oil in a Dutch oven to 365°F.
Whisk together cornmeal, flour, sugar, baking powder, salt, and cayenne.
Beat egg with buttermilk.
Stir wet ingredients into dry until just combined.
Fold in minced onion.
Let batter rest 5 minutes.
Drop by rounded tablespoons into hot oil.
Fry 2-3 minutes per side until deep golden brown.
Drain on paper towels and salt immediately.
Serve hot!

Legend says they got their name from being tossed to dogs to keep them quiet while fish was frying. The onion is essential for authentic flavor!
