Pimento Cheese

Sharp, creamy pimento cheese for sandwiches, crackers, or celery sticks. The caviar of the South!

Ingredients

  • 8 oz extra-sharp cheddar cheese (shredded)
  • 8 oz sharp cheddar cheese (shredded)
  • 8 oz cream cheese (softened)
  • 1/2 cup mayonnaise
  • 1 jar diced pimentos (4 oz, drained)
  • 1/4 tsp cayenne pepper
  • 1/4 tsp garlic powder
  • Salt and pepper to taste

Instructions

  1. Let cream cheese soften at room temperature.
  2. Grate the cheddar cheeses (pre-shredded won't meld as well).
  3. Beat cream cheese and mayonnaise until smooth.
  4. Fold in shredded cheeses.
  5. Add drained pimentos, cayenne, and garlic powder.
  6. Season with salt and pepper.
  7. Mix until well combined but still slightly chunky.
  8. Refrigerate at least 1 hour for flavors to meld.
  9. Serve with crackers, on sandwiches, or stuffed in celery.

💡 Tips & Notes

Grating your own cheese makes a huge difference in texture! Some folks add jalapeños for kick. It's even better the next day.
